Sasha's Mom's Simple Roast Chicken

Something to sink your teeth into



  • Whole Chicken (Kosher is recommended)
  • Salted Butter
  • Stuffing i.e. (Lemons, garlic cloves, thyme sprigs, rosemary, tarragon…whatever you fancy)
  • Pepper!

Cooking Instructions

  1. Buy a chicken-preferably a Kosher chicken; that way you don't need to salt it.

  2. Preheat oven to 400 degrees.

  3. Grease a ceramic baking dish (Sasha uses a giant ramekin-style pot) with salted butter.

  4. Stuff the cavity of the chicken with aromatics.

  5. Pepper the skin to taste.

  6. Roast the whole chicken for 1 hour.

  7. Let the chicken rest for 20 minutes and carve; save juices to sauce the meat and jar extras for sauces or dressings.
