Sasha's Mom's Simple Roast Chicken
Something to sink your teeth into
- Whole Chicken (Kosher is recommended)
- Salted Butter
- Stuffing i.e. (Lemons, garlic cloves, thyme sprigs, rosemary, tarragon…whatever you fancy)
Buy a chicken-preferably a Kosher chicken; that way you don't need to salt it.
Preheat oven to 400 degrees.
Grease a ceramic baking dish (Sasha uses a giant ramekin-style pot) with salted butter.
Stuff the cavity of the chicken with aromatics.
Pepper the skin to taste.
Roast the whole chicken for 1 hour.
Let the chicken rest for 20 minutes and carve; save juices to sauce the meat and jar extras for sauces or dressings.
